Theme Menus

Let the experts at Infusion help you by creating a party atmosphere that will transport you and your guests to a different space and time.  By conceptualizing a theme, your guests will “get into it” just a bit more.  You will provide an outlet for people to let go of their inhabitations and go with the flow.  Whether it be strolling the French Quarter, Walking the Catwalk or enjoying a beach volleyball game, we can transform any room into a location far away.  Interactive food stations with an international theme can be the focus of any event or can be combined with a buffet to create an exciting experience for your guests.  Call us for more details, we are always happy to help!

Mexican Fiesta

This is a great idea for a corporate picnic or a family event. We will set up our barbecue and delicious meats come hot off the grill. Your guests can choose from an abundance of fresh fajita and Mexican theme buffet choices. We’ll arrange all your party rentals, staff, and even get you a Mariachi Band to heat things up!

Upon arrival each guest will be greeted by a member of the Infusion staff and given a delightful cocktail of their choice.  Either our Tropical Treat, combining fresh juice of cantaloupe, mango, orange and pineapple, or our Berry Madness (alcohol free margarita) combining fresh juices of strawberry, cranberry, blackberry and blueberry.  Refills will be available throughout the fiesta, as well as a selection of bottled water, and cold soft drinks.

Greeting Appetizer
Endive Spears with black bean papaya salsa.

Grill
We will be grilling up a wonderful selection of meats and seafood for you and your guests to feast upon.  Juicy striploin steaks, plump chicken breasts and skewers of garlic/lemon marinated shrimp combined with sweet red and yellow peppers and tasty pineapple.

Corn on the Cob
Grilled in their husks, this ensures a juicy and flavorful outcome.  You can choose to go with the theme, dressing your corn with warm butter, freshly squeezed lime juice and a light sprinkling of cayenne pepper to heat things up a little.

Fajita and Buffet Station
Warm soft tortilla shells will be awaiting the arrival of some hungry appetites.  Fill them up with any selection or all three of the grill choices.

Toppings will include our homemade authentic Mexican salsa, combining fresh jalapeno peppers, tomato, onion, lime and coriander.  Diced tomato, homemade guacamole, shredded cheese, sour cream and diced onion and for the very daring spicy hot pepper sauce.

Spanish Rice Salad
Light and fluffy rice combining a touch of saffron, fried egg, corn and diced red and green peppers.  Tossed in a light lime dressing.

Mango Tequila Salsa
An explosion of flavors!  Infusion’s spicy mango salsa is served with fresh corn chips.

Coleslaw
Your choice of a creamy dressing or balsamic vinaigrette.  Our homemade coleslaw is sure to add a cooling effect for those who choose the extra spicy toppings.

Dessert
For dessert why limit yourself to one choice.  Let’s combine a variety of gourmet petite fours, cheesecakes and cookies.  For the health conscious we will display a wide variety of fresh fruits and tempt them with our white chocolate Bailey’s dipping sauce.  The fruits will be skewered and decoratively displayed around the rim of a carved pineapple boat.

Roasted Suckling Pig and Fresh Ontario Lamb
Freshly roasted and right off the spit, our chef will carve the roasts right before your eyes. Tender, juicy, and savory, you will love these roasts and keep coming back for more! 

Horiatiki
This traditional Greek salad combines fresh tomato wedges, cucumber, green peppers, tangy feta cheese and authentic Kalamata olives tossed in our delicious Greek dressing.

Herb Roasted Potatoes
Parisian cut potatoes are slow baked with a fragrant medley of oregano, extra virgin olive oil, a hint of garlic and a dash of lemon. Slightly crispy on the outside, they open up steaming with a fluffy, flavorful center. A perfect accent to the roasted meats!

Dips and Breads
No Greek feast is complete without a selection of dips; tzatziki, hummus and Kalamata and green olives all served with a bounty of fresh pitas.

Dessert
A beautiful dessert table brimming with sweet baklava made with fresh honey and crunchy pistachios. The best way to top off this Greek Banquet!
